🛒 Ingredients (Serves 2)
- 2 cans (400g each) white cannellini beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, very thinly sliced
- 1/2 cup kalamata olives, halved
- 100g feta cheese, crumbled
- Fresh basil and parsley, chopped
🤫 Secret Lemon Herb Dressing
- 3 tablespoons extra virgin olive oil
- Juice of 1 large lemon
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1 teaspoon red wine vinegar
- Salt and black pepper
- Pinch of red chili flakes
- Whisk together — pour over and toss!

- Drain and rinse beans — pat dry
- Combine beans, tomatoes, cucumber, red onion, olives in bowl
- Whisk together all dressing ingredients
