- 4 large bell peppers (any color)
- 1.5 lbs ground chicken breast
- 1/2 cup Frank's RedHot sauce (the classic!)
- 1 cup cooked brown rice or cauliflower rice
- 1/2 cup Greek yogurt (replaces cream cheese!)
- 1/2 cup shredded mozzarella
- 1/4 cup blue cheese crumbles
- 2 stalks celery, diced fine
- 3 green onions, sliced
- Salt, pepper, garlic powder

👩🍳 Instructions
- Preheat oven to 400°F (200°C)
- Cut tops off peppers, remove seeds, place in baking dish
- Cook ground chicken in skillet until browned

- Stuff mixture firmly into each pepper
- Top with mozzarella and blue cheese crumbles
