  • 4 large bell peppers (any color)
  • 1.5 lbs ground chicken breast
  • 1/2 cup Frank's RedHot sauce (the classic!)
  • 1 cup cooked brown rice or cauliflower rice
  • 1/2 cup Greek yogurt (replaces cream cheese!)
  • 1/2 cup shredded mozzarella
  • 1/4 cup blue cheese crumbles
  • 2 stalks celery, diced fine
  • 3 green onions, sliced
  • Salt, pepper, garlic powder
