Blend one can of white beans with 1 cup pasta water until completely silky smooth. This creates a naturally creamy sauce that is thick, rich, and luxurious — without any heavy cream! The starch from the pasta water makes it cling to every piece of pasta perfectly!

🛒 Ingredients (Serves 4)

  • 12 oz rigatoni or penne pasta
  • 2 cans (15 oz each) white cannellini beans, divided
  • 1/2 cup sun-dried tomatoes in oil, chopped
  • 4 cups fresh baby spinach
  • 6 garlic cloves, minced
  • 1/2 cup grated Parmesan plus more to serve
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper
  • Fresh basil to garnish

  1. Cook pasta — reserve 1.5 cups pasta water before draining
  2. Blend 1 can beans with 1 cup pasta water until silky smooth
