Blend one can of white beans with 1 cup pasta water until completely silky smooth. This creates a naturally creamy sauce that is thick, rich, and luxurious — without any heavy cream! The starch from the pasta water makes it cling to every piece of pasta perfectly!
🛒 Ingredients (Serves 4)
- 12 oz rigatoni or penne pasta
- 2 cans (15 oz each) white cannellini beans, divided
- 1/2 cup sun-dried tomatoes in oil, chopped
- 4 cups fresh baby spinach
- 6 garlic cloves, minced
- 1/2 cup grated Parmesan plus more to serve
- 2 tablespoons extra virgin olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- Salt and black pepper
- Fresh basil to garnish
👩🍳 Instructions
- Cook pasta — reserve 1.5 cups pasta water before draining
- Blend 1 can beans with 1 cup pasta water until silky smooth
- Saute garlic in olive oil 1 minute
- Add sun-dried tomatoes and cook 2 minutes
- Pour in blended bean sauce and remaining whole beans
- Add Italian seasoning and red pepper flakes
- Add spinach and wilt 2 minutes
- Add cooked pasta and Parmesan — toss to coat
- Add pasta water if sauce too thick
