One Pan Chicken Dinner — Ready in 25 Minutes with Zero Cleanup!
The easiest healthy dinner you will ever make! Everything goes on one pan, into the oven for 25 minutes, and comes out perfectly cooked with incredible flavor. High protein, low calorie, and absolutely delicious. Plus — only one pan to wash!
🛒 Ingredients (Serves 4)
- 4 chicken thighs (bone-in, skin-on)
- 1 cup cherry tomatoes
- 2 zucchini, sliced into half moons
- 1 bell pepper, chopped
- 200g baby potatoes, halved
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- Juice and zest of 1 lemon
- Fresh rosemary and thyme
- Salt and pepper to taste
🔥 The Secret Seasoning Blend
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- Salt and black pepper
Mix all spices together and rub generously over chicken before cooking!
👩🍳 Instructions
- Preheat oven to 220°C (425°F)
- Mix olive oil, garlic, lemon juice, and seasoning blend
- Toss vegetables in half the mixture, spread on baking sheet
- Rub remaining mixture all over chicken thighs
- Place chicken on top of vegetables
- Bake for 25-30 minutes until chicken is golden and crispy
- Broil for last 3 minutes for extra crispiness
- Garnish with fresh rosemary and lemon slices
